Molten Chocolate Lava Cakes

This is one of my favourite treats because it is so easy to make and is ready in 15 minutes! Plus you can bake it in the microwave if you really want a quick treat.

 Ingredients:

  • 1/4 cup of butter
  • 2 oz  semi-sweet or dark chocolate (or 1/3 cup of chocolate chips)
  • 1 egg plus 1 egg yolk
  • 3 tbsp of flour
  • 1/2 cup of icing sugar

Directions:

Preheat the oven to 425°F.

Melt the butter and chocolate in the microwave for about a minute.

If there are still a few chocolate chunks after microwaving, stir until the mixture is smooth.

Next, add the egg and egg yolk and stir.

Add the icing sugar and flour. Stir in the flour and icing sugar until they are completely combined with the chocolate mixture.

Pick your baking dish. This can be anything oven safe such as a pyrex, ramekin, or muffin tins.

Grease your baking dish, I always use a bit of soft butter and a paper towel.

Spoon the mixture into the baking dish. This recipe makes 2 larger cakes or 4 smaller cakes.

Bake for 8-12 minutes.

The tops should have hardened (no liquid batter should be showing on the tops), but the middle should be soft to the touch (and not bounce back).

Serve fresh out of the oven topped with ice cream!

Don’t feel like using the oven? You can make these in the microwave in a mug. Cook for about a minute/minute and a half! Though, for best lava-like results, an oven is best.
