Brownie Cookie Bars

These are so delicious! A combination of cookie and brownie, and perfect for when you can’t decide which you want – so you eat both. 

Also, I’ve been trying out my new camera, so most of these pictures I took with it!


Cookie Dough:

  • 5 tbsp butter, softened
  • 3 tbsp of brown sugar
  • 3 tbsp of granulated sugar
  • 1 egg
  • 1/2 tsp of vanilla extract
  • 1/8 tsp of baking powder
  • 1/4 tsp of baking soda
  • 1/2 tsp of salt
  • 1 1/4 cups of all purpose flour
  • 3/4 cup of semi-sweet chocolate chips


  • 1/4 cup of butter
  • 1/2 cup of semi-sweet chocolate chips
  • 3/4 cup of granulated sugar
  • 1 egg
  • 1/2 tsp of vanilla extract
  • 1/2 tsp of salt
  • 2 tbsp of cocoa
  • 5 tbsp of all purpose flour

    Preheat the oven to 350°F.


    In a large bowl, cream together the softened butter, brown sugar and granulated sugar. 

    Mix in the egg and vanilla. 

    Add the flour, baking soda, baking powder and salt. Mix together well.

    Finally, mix in the chocolate chips. Personally, I love mini chocolate chips, and I found that 3/4 of a cup was almost too much – add a little at a time and see what you prefer!

    Set aside.


    Melt the butter and chocolate chips together. It is recommended that you melt on the stove in a double boiler, but I cheated and used the microwave, in a microwave safe bowl – mine turned out fine, just be careful not to burn them! Do a little bit at a time, then make sure it is mixed together well, and there are no chunks.

    Mix in the sugar, followed by the egg and vanilla. 

    Stir in the cocoa and salt. 

    Finally, mix in the flour, little by little until completely combined.

    Grease or line an 8 x 8 baking tin.

    I cut a square of parchment paper to fill the bottom of the pan, but you can also grease the pan.

    Pour in the brownie batter, and spread out equally over the bottom of the pan.

    Next, roll 9 balls of cookie dough, and smush them between your hands to flatten them.

    Press them into the brownie batter in lines of 3.

    This ensures your bars don’t fall apart, and cookies well.

    Bake for approximately 25 minutes.

    Let cool in the pan before slicing.
