Pumpkin Pie Cookie Bars
It’s Pumpkin baking season, and this is a delicious recipe, which is definitely worth repeating!
This recipe may sound a little weird a first, but I promise it’s amazing!
My housemates loved this recipe and helped bake it with me.
If you don’t want to make the whole recipe, it can be cut in half and baked in a 8 x 8 baking pan – I tried this and it still turns out perfect!
Ingredients:
Cookie Layer:
- 1 cup of butter
- 2 cup of brown sugar
- 2 eggs
- 1 tablespoon of vanilla
- 3 cups of all-purpose flour
- 2 teaspoon of baking powder
- 1 teaspoon of salt
Pumpkin Pie Layer:
- 1/2 cup of butter
- 1 cup of granulated sugar
- 2 eggs
- 1 teaspoon of vanilla
- 1 1/2 cups of pumpkin puree
- 1 cup of all-purpose flour
- 1 teaspoon of baking powder
- 1 teaspoon salt
- 1 teaspoon pumpkin pie spice
Sugar Topping:
- 2 tablespoons of sugar
- 1 teaspoon of cinnamon

Directions:
Preheat the oven to 350°F
Cookie Layer: Soften the butter, and cream together with the brown sugar.
Beat in the eggs, and vanilla.
Add the flour, baking powder and salt, then combine all together.
Grease a 9 x 13 baking pan, and add the cookie layer, pressing down evenly to cover the entire baking pan.
Pumpkin Pie Layer: Soften the butter, and cream together with the sugar.
Beat in the eggs and vanilla.
Mix in the pumpkin puree.
Add the flour, baking powder, salt, and pumpkin pie spice.
Combine completely.
Add this mixture evenly on top of the cookie layer.
Try not to get too much on the edges of the pan because these will burn.
Sugar Topping: Mix together the sugar and cinnamon.
Sprinkle the mixture evenly on top of the pumpkin pie layer.
Bake for approximately 40 minutes.
Let cool, then cut into squares.
