S’more Cookies

To continue with my summer cottage theme, no summer is complete without having s’mores on the campfire.

These cookies were such a hit at the cottage on the weekend.

Not quite a traditional s’more, but apparently the best thing my boyfriend has ever had!


Chocolate Chip Cookies:

  • 1 1/4 cups of granulated sugar
  • 1 1/4 cups of packed light brown sugar
  • 1 1/2 cups of butter or margarine
  • 2 teaspoons of vanilla extract
  • 3 eggs
  • 4 1/4 cups of all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon of salt
  • 2 cups of chocolate chips
  • 1 cup of mini marshmallows
  • 3 Hershey’s milk chocolate bars (only need about 2 1/2 bars) 
  • 1 Box of Graham Crackers 


Preheat the oven to 350°F

Chocolate Chip Cookies:

Melt the butter, and mix in the granulated sugar, and light brown sugar.

Next, add the vanilla and eggs, and stir.

Add the flour, baking soda and salt, and mix together.

Finally, mix in the chocolate chips.

Now, lay out graham  crackers onto a baking sheet.

I broke the graham crackers in half, so they were squares.

 Finally, roll the rough into balls (1 ball = 2 tablespoons approx).

Place them on top of the graham crackers. 

Bake for approx. 10 minutes, then remove from the oven and place one Hershey square and three mini marshmallows on each cookie. 

It is important to do this while the cookies are fresh out of the oven, so the chocolate and marshmallows melt into the cookies.

Serve either warm or cold – they are more like s’mores when they are hot!
