Snickerdoodle Bars

These are delicious! 

These are really similar to the bottom to the Pumpkin Pie Cookie Bars, which were a huge hit at my house.


  • 1 cup of butter 
  • 1 cup of granulated sugar
  • 1 cup of brown sugar
  • 2 eggs
  • 1 1/2 teaspoon of vanilla extract
  • 2 1/2 cups of all-purpose flour
  • 2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 1/2 cup of cinnamon


  • 1/4 cup of granulated sugar
  • 1 1/2 teaspoons of cinnamon

Preheat the oven to 350°F

Line a 9×13 inch baking pan with parchment (just the bottom, not the sides). You can also just grease the pan, but parchment is a lot easier in my opinion.

In a large bowl, cream together the softened butter and sugars with an electric mixer.

Mix in the eggs and vanilla.

Next, add in the remaining dry ingredients: flour, baking powder, salt and cinnamon.

Mix together.

Add this mixture to the baking pan, and press down evenly to cover the entire pan.

In a small bowl mix together topping ingredients: sugar and cinnamon.

Spread the mixture evenly over the top of the dough in the baking pan.

Bake for 25-30 minutes.

Stick a wooden skewer in, if any wet dough comes out, leave it in a little longer.

The tops should be golden when cooked.

Allow the bars to cool before slicing.

I was so excited to eat them, that I forgot I should slice them and make them picture perfect…whoops. They still tasted amazing though!
