Single Serve Snickerdoodle Cake

This recipe is perfect for when you want a piece of cake, but don’t actually want to bake a whole cake. It is the perfect size and really delicious!

  • 1/4 cup + 2 tablespoons of all-purpose flour
  • 2 tablespoons of sugar
  • 1/4 teaspoon of baking powder
  • 1/4 teaspoon of cinnamon
  • 1/4 cup of milk, at room temperature
  • 2 tablespoons of salted butter (melted and cooled)
  • 1/2 teaspoon of vanilla extract


  • 1 tablespoon of sugar
  • 1/4 teaspoon of cinnamon


This receipt can be made in the microwave or in the oven. 

If you pick oven, preheat to 400°C.

In a small bowl, melt the butter, and mix in the milk (I used almond milk).

Add the vanilla extract, and mix together.

Next, add the flower, sugar, baking powder and cinnamon.

Once the mixture is completely combined, grease a mug or small ramekin dish.

Mix together the sugar and cinnamon topping.

Add a few spoonfuls of the mixture to cover the bottom of the dish, then sprinkle a teaspoon of the topping, then add another few spoonfuls of mixture, and repeat until all the mixture is finished, and then ensure the top is covered with the topping.

Bake for 15-20 minutes in the oven, keep checking on it and stick a skewer in the middle to check if it comes out clean.

Bake in the microwave for 1 1/2 minutes (on high) or until cake is cooked to your liking.

Allow to cool for a few minutes before eating.
